Heavy Handed Barleywine

18 pounds American 2 row pale
2.5 pounds American Munich
2 pounds of corn syrup
.5 pound Crystal 120
2 oz Simpson's Chocolate

Mash @ 153F

2 oz. of Apollo hops @ 2 hr. boil (18%AA)
1 oz. of Centennial hops @ 20m boil (10%AA)
.5 oz of Apollo hops @ 15m boil
.75 oz of Centennial hops @ 5m boil
(sub for Apollo might be Columbus or other high alpha hop)

Add the corn syrup late in the boil... I did it around 20 minutes left in the boil

Pitch onto a fresh medium gravity yeast cake (US-05) and ferment in the upper 50's F.

Btw... this has to age at LEAST 3 to 4 months before it becomes drinkable.
